saffron comes from Castilla La Mancha, Spain’s premiere saffron-growing
region. Saffron “de la Mancha” stigmas are handpicked and dried in the same
day. They are dried indoors and not in the sun, so they retain all of their
pungent fragrance, rich color and delicate taste. Each jar bears an
individually numbered DO (Denomination of Origin de la Mancha) seal
certifying and guaranteeing that you are buying only the best Spanish
saffron. You need a lot less of our saffron to make dishes that explode with
color, flavor and aroma. Use only 4-5
stigmas per serving. Using too much can result in a bitter taste. Hand-rub
or crush in a mortar, then soak in 2 or 3 tablespoons of hot broth or water
for about 10 minutes. Add to your recipe at the last possible moment. |
